Melonpan

    inner dough

  • 250g flour
  • 40g butter
  • 100ml milk
  • yeast
  • 60 sugar
  • 1 egg

    outer dough

  • 200g flour
  • 60g butter
  • 100g sugar
  • 1 egg

    baking

  • mix ingredients for the outer dough and refrigerate. make sure it won't freeze.
  • mix ingredients for the inner dough and rise for 30-60 minutes until it puffs up nicely.
  • form 5 buns, cover each in a layer of the outer dough. only cover the upper side, it doesn't have to fully surround the bun.
  • cut the typical melonpan pattern into the outer layer and rise for 30 more minutes.
  • roll buns in sugar
  • preheat oven to 180°C and bake for ~15 minutes.
