Mapo Tofu
ingredients
- 300g tofu
- 50g soya granules
- 200ml water
- 2 cloves of garlic
- 1Tsp cayenne pepper
- 1Tsp ginger
- 3Tsp soy sauce
- 1Tsp ground sichuan pepper
- 1Tsp Doubanjiang (or 2Tsp ajvar)
- 2 spring onions
- salt
- oil
- rice
sauce
- lightly roast sichuan pepper without oil (1 minute max!) but be careful to not burn it
- soak soy granules in 150ml water for 20 minutes, then fry in oil
- add ginger, cayenne pepper, garlic
- add soysauce, 50ml water, doubanjiang or ajvar, sichuan pepper and salt and simmer for 10 minutes on low heat
- slice spring onion, serve sauce with rice topped with spring onion
