put yeast, salt, flour and water in a bowl. make sure the bowel is large enough (3x the dough volume).
mix using a mixer and dough hooks for 8 minutes. if by hand, 30 minutes with a fork. if not using a stationary device, move the mixer from the edge of the bowel accross through the dough, then rotate bowl a bit and continue to work around the dough in circles. you're weaving the structure!!
refrigerate for 6-10 hours. remove and let it slowly warm up for ~ one hour
preheat oven to 200C. cover parchment paper in oil, VERY LITTLE. use a cloth the spread it as thin as possible.
put a small bowl with lukewarm water beside the dough. with wet hands, push the dough from the walls of the bowl gently to the bottom. keep your hands wet at all times so the dough doesn't stick! with your hands (NOT A KNIFE!!!) split the dough into two pieces, then skillfully grab them individually and spread in baguette or ciabatta shaped sausages on the parchment (on a baking tray) in one move. avoid splitting the dough into smaller chunks.
dust it with flour, make it flat and call it ciabatta if you want to insult the french >:333
